History and culture are as abundant in Las Cruces as the sunshine. Your attendees can have the opportunity to learn about legends such as The Butterfield Stage Line, Billy the Kid, Pat Garrett, and Apache Chiefs Geronimo and Victorio, who all left their mark on the land and its people. Their stories were captured and are retold though local lore and are still present today in the museums and shops.

Food is a hallmark of the culture in Las Cruces and the Chile Pepper Institute, located on the campus of New Mexico State University, is the only international, non-profit organization devoted to education and research related to Capsicum, or chile peppers. Established in 1992, the Institute builds on the research of chile peppers since the famous horticulturalist Fabian Garcia, the father of the U.S. chile pepper industry, began standardizing chile pepper varieties in 1888.
